Sarah just dropped by. I made healthy fried rice for us for lunch. Still cleaning out the studio. Don't think I'll ever get it finished, but I'm making progress.
Fried Rice Recipe
1/2 cup frozen peas
1/4 cup grated carrot
1/4 cup sliced green onions
4 cups cooked rice (I use brown rice)
1/4 cup egg beaters
2 tablespoons low sodium soy sauce
1/2 tsp ground ginger
1/2 tsp garlic powder
1/4 tsp Splenda
spray wok or large skillet with cooking spray. Add peas, carrots, and onion fry till crisp tender. Add rice cook and stir till heated through. Make a hole in the bottom of the skillet and pour egg beaters. Let egg set up then stir into the rest of the pan. Add soy sauce, then add seasonings. YUM!!!!
