Lentil and Spinach Soup


Happy 1st day of November! 

This time of the year I'm all about making great hot soups. 
So very comforting to sit down and have a nice hot bowl of soup. 

This one is Lentil and Spinach soup. 
Very low in calories and very filling. 
I even got Skip to eat it. Which is a surprise because he is not a spinach person. 

Makes 10 cups
180 calories per cup

2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 cups uncooked lentils 
4 cups vegetable broth
4 cups water
1 sprig fresh rosemary
7 oz baby spinach roughly chopped
2 large tomatoes, peeled, and chopped
1/2 tsp pepper

Heat oil in large stock pot, add onion and garlic. Cook 5 minutes.
Add lentils, broth, water, and rosemary. Bring to boil, reduce heat and simmer uncovered 20 miutes
Add spinach and tomatoes, simmer additional 10 minutes. Add the pepper, and stir.
