Peanut Butter Cookies
So what is a weight watching girl suppose to do when she wants a cookie? She finds a way to make them with lower points.
Peanut Butter Cookies on the quick side
1 1/2 powdered sugar
1 cup creamy reduced fat peanut butter
1 large egg
1 teaspoon vanilla extract
preheat oven to 325
mix sugar, peanut butter, egg, and the vanilla together in a large bowl. Roll the batter into about 3/4 inch balls. You should be able to get 36 of them. Place balls on cookie sheets and using fork do a little cris-cross design. Bake for 10 minutes. Let them cool on the sheets before removing to wire rack. After they have cooled place in zip lock baggies. Each cookie is 2 points. I put them in the freezer so as not to eat more than I should:) These cookies are chewy, and really hit the sweet spot!
