Let Them Eat Cake
Well....really let me eat CAKE!!!! I wanted to share a recipe with you that I've been using since I started WW back in 08.
Start with one box of Angel Food Cake mix, and one box of any flavor box cake mix. Of course my cake mix of choice is chocolate.
Use a large air tight container or a large ziplock bag. Mix both of the cake mixes together. Make sure you mix them up well.
To use the mix: Take 1/3 cup of the mix and put in a coffee cup. Add 3 tablespoons of water, mix. Microwave for 1 minute. WW Points 3
You can also mix it this way: 1/4 cup of the mix and 2 tablespoons of water. Microwave 1 minute. WW Points 2
Since I like frosting, but not the calories and fat I top my cake with 2 tablespoons of fat free Cool Whip.
Another mix: Angel Food cake mix, and Banana cake mix. With this one I top it with a bit of peanut butter. It melts on the hot cake to make the frosting.

What a great idea, Karen! So basically, I guess this is "cake for one"! I'll have to try it. My favorite "one cup" meal is breakfast - 5 or 6 ozs of egg whites in a porcelain cup (glass would probably do), nuke for 1 1/2 min. I add some baked, seasoned tofu for a bit more protein (& flavor). If I am really hungry, I take a slice of cheese and break it up into smaller bits and nuke it with the eggs. That's probably too many calories/points for a WW breakfast, but it is good!
That sounds great Pat. I could use Laughing Cow cheese if I wanted to add that to the eggs. It only has 35 calories per wedge. When I make eggs I only use whites so this is perfect. Thanks for the idea. Yes the cake in the mug is for one.
